Asian Noodle Salad – GF/V
Most Asian noodle dishes are packed with MSG, or other highly processed sauces with tons of refined sugar. This healthy version can be served on its own or with any other Asian main dish or stir fry.
- 1 pack gluten free soba noodles (or brown rice noodles)
- 1 cucumber
- 1 bunch of scallions
- 1cm ginger
- 1 clove garlic
- 5 tbsp brown rice vinegar
- 2 tbsp SugaVida
- 2 tbsp toasted sesame oil
- Juice of ½ a lime
- 1 medium red chilli finely chopped (optional)
Cook the noodles according to instructions and either chill or serve warm. Finely chop the cucumber and spring onions and add to the drained noodles. Finely grate the ginger and garlic.
Add the brown rice vinegar, SugaVida, toasted sesame oil, lime juice and chili. Whisk all the ingredients together, pour over the salad and serve.
