Carrot and Miso Dip – GF/V
This is one of my favourite dips/dressings. I make a big batch and keep it in the fridge and serve it with veggies and salad or with roasted mushrooms or fish.
- 1 large carrot or 2/3 small ones
- 2 tsp chopped ginger
- 1 tbsp sweet white miso
- 1 tbsp SugaVida
- 2 tbsp rice vinegar
- 1 tbsp toasted sesame oil
- 1 tbsp coconut aminos
- 65ml organic oil (plain sesame, grapeseed, mild olive oil)
- Salt and pepper to season
Blend all together in a blender/vitamix/nutribullet and serve.
