Dale Pinnock’s Banana & Cinnamon Muffins – GF

  • 350g gluten free flour
  • ¾ tsp salt
  • 1½ tsp baking powder
  • ½ tsp bicarbonate of soda
  • 2 tsp ground cinnamon
  • 80g SugaVida
  • 375ml organic buttermilk
  • 1 egg
  • 70g butter melted
  • 1 tsp vanilla extract
  • 400g peeled mashed banana

Preheat the oven to 170C, Gas 3, 325F. Put all dry ingredients in a bowl and whisk until combined.

Put the buttermilk, egg, and vanilla into a jug and whisk. Slowly pour into the flour mixture and beat slowly. Then pour in the melted butter and stir in the mashed bananas.

Spoon into pre-greased paper cases until two thirds full and sprinkle a little extra SugaVida and cinnamon on the top. Bake in a preheated oven for 25 minutes until golden brown and the sponge bounces back when touched.
